Smoked Pork Butt

Ingredients:

1 Boston Butt pork roast
brown sugar

PORK BUTT RUB
1 Cup Paprika
¼ Cup Pepper
1 Cup Salt (kosher)
1 Cup Sugar (plain)
4 T Chili Powder
4 T Garlic Powder
1 T Thyme
1 T Cayenne

Directions:

Mix all ingredients for rub together. Coat meat with vegetable oil. Rub Boston Butt with prepared rub and allow it to sweat.

Place on smoker at 224° until meat reaches an internal temperature of 165F. Wrap butt in aluminum foil, place a handful of brown sugar on the top & bottom.

Remove when internal temperature reaches 200°F.
