Buffalo Chicken Pimento Cheese

Pimento cheese

6 tbl mayo
2 tbl dill pickle juice
1 # grated cheese (sweetwater cheese)
1 teaspoon garlic
1/3 cup roasted red pepper
1 teaspoon hot sauce buffalo sauce (spring creek farm)
1.5 teaspoon Dijon mustard
Salt and pepper to taste

Buffalo Chicken:
8 oz chicken breast
salt and pepper to taste
Buffalo sauce
1/2 cup Chicken stock


Pimento cheese:
Mix well and refrigerate

Buffalo Chicken:
Season chicken with salt and pepper
Poach chicken in a pot using buffalo sauce and chicken stock as the poaching liquid
When done shred the meat fine and blend in with pimento cheese
