Roasted Garlic Tomato Soup

Ingredients:

3 pound plum tomatoes, halved lengthwise
12 cloves garlic
salt & pepper
3 tablespoon olive oil

½ onion - chopped
3 tablespoons olive oil
1 tablespoon fresh rosemary - chopped
1 teaspoon thyme
¼ teaspoon crushed red pepper
3 tablespoons fresh basil - chopped
2 quarts chicken broth
½ cup tomato puree
½ cup whipping cream

Directions:

Place tomatoes & garlic on baking sheet. Sprinkle with salt & pepper. Drizzle with olive oil. Bake in a 400 degree oven till tender - about 1 hour. Cool & then using a food processor chop tomatoes & garlic till chunky.

Cook onion in olive oil till clear. Add rosemary, thyme, red pepper, basil, chicken broth, & tomato puree. Bring to a boil. Add chopped roasted tomatoes & garlic. Cook till thickened - about 30 minutes. Add cream & serve.
