½ Cup or 4 oz. Unsalted Butter
1 ¼ Cup Sugar
1 Egg
1 Cup Buttermilk
1 teaspoon Vanilla Extract
1-2/3 Cup All Purpose Flour
½ teaspoon Salt
1 Cup Cocoa Powder
½ Tablespoon Baking Powder
½ Tablespoon Baking Soda

16 oz. Heavy Cream
16 oz. White Chocolate
flavoring of your choice


For the Sweetie Pies:
Cream butter and sugar until light and fluffy. Add egg, buttermilk, and vanilla. Meanwhile, whisk dry ingredients (flour, salt, cocoa, baking powder and soda). Slowly add flour mixture to butter mixture. Transfer batter to air tight container and refrigerate one hour or until batter firms up. Preheat oven to 300. Line a baking sheet with parchment paper or a silicone baking sheet (good cooking spray will also work). Using a spoon or scooper, place dollops of batter onto prepared baking sheet leaving space in between each one for spreading. Bake for six minutes or until tooth pick comes out clean.

For Ganache:
Bring cream to a boil then pour over chocolate. Whisk until smooth. Cover with plastic wrap until set (approx. 24 hours.) Transfer to mixer and beat until light and fluffy (3 minutes.) Add vanilla, peanut butter, espresso powder, or any other flavoring of your choice.

Spread a heavy amount of ganache onto a cake round, then top to make a cream filled cookie!
