Gazpacho with Shrimp

Ingredients:

1 medium cucumber, peeled and chopped
Seed if necessary
1/2 red bell pepper, coarsely chopped
1/2 green bell pepper, coarsely chopped
1/2 small red onion, coarsely chopped
2 large tomatoes, peeled and diced
2 cups tomato juice of your choice
I use spicy hot V8 juice
2 tablespoons chopped cilantro or parsley
1 teaspoon minced fresh jalapeño
May add more or omit.
2 tablespoons olive oil
1 1/2 tablespoons red wine vinegar
2 teaspoons fresh lime juice
Salt and pepper to taste

Directions:

4 ounces cooked shrimp, medium fine chop In a food processor, process cucumber, bell peppers and onion until finely chopped. Pour into a large bowl. Add all of the remaining ingredients and stir gently. Cover and chill at least 4 hours.
