Deviled Eggs

8-10 boiled eggs, halved and separated
4-5 sweet gherkins, finely minced
2 tablespoons pickle juice
1-2 teaspoons prepared mustard
Salt and pepper to taste
1/4 cup mayonnaise


Mash with a fork or spin in a small food processor the egg yolks and the pickles. Remove to a small bowl and add pickle juice, mustard, mayonnaise, salt and pepper. Fill egg white cavities with the mixture. Garnish with paprika or a tiny piece of pickle. Cover and chill until serving time.
