Oatmeal 'n Jam Bars

1 stick butter, at room temperature
1/2 cup light brown sugar, firmly packed
1 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
1 cup rolled oats
3/4 cup seedless jam of your choice, raspberry, strawberry, blackberry etc.
(Orange, pineapple and apricot marmalade are good choices as well.)


Preheat oven to 350 degrees. Spray an 8x8-inch baking dish with cooking spray. Line with foil and spray the foil. Using a pastry blender, mix first six ingredients thoroughly. (butter through oats) Stir in oats. Press two cups of the mixture into the prepared pan. Using the back of a big spoon, spread the jam evenly over the surface to within 1/4 inch of the edge. Sprinkle the remaining mixture over the jam. Do not spread too heavily into the corners.
