Tuscan Grilled Tuna Steaks

4 fresh tuna steaks, 6 to 8 ounces each
1 tablespoon lemon zest
1 tablespoon orange zest
1 tablespoon minced parsley
3 sprigs fresh rosemary
3 cloves garlic
¼ cup white wine
1 teaspoon crushed red pepper flakes
1 teaspoon grill seasoning
1 tablespoon butter
1 lemon
Coarse salt and black pepper
Extra-virgin olive oil


Rinse and pat tuna steaks dry. Finely chop the garlic, herbs, and spices. Drizzle olive oil over steaks to coat. Rub garlic and herb mixture onto fish coating both sides evenly. Pour wine around the steaks and Allow to marinate for approximately 1 hour. Grill steaks approximately 3 to 5 minutes per side, or until you preferred doneness. Baste with butter and top with grill seasoning and spritz with a fresh lemon wedge.
