Tomato & Bread Salad

4 cups toasted bread, cubed (cornbread or your favorite)
1 large tomato, cut into wedges
1 pint cherry tomatoes
1/2 English cucumber, sliced
onion, chopped
1/2 cup olive oil

Vinaigrette Dressing:
1 cup olive oil
1/3 cup red wine vinegar
2 T. capers
1 T. kosher salt & 1/2 T. black pepper, or to taste
1/2 c. favorite fresh herbs, such as basil, parsley, etc.


Place bread into mixing bowl, toss with olive oil, then turn onto baking sheet and toast in oven at 350 degrees until lightly brown, about 12 minutes.

Mix ingredients for dressing. To assemble place toasted bread cubes into serving bowl. Add tomatoes, onions, cucumbers. Toss with dressing and fresh herbs.
