Crab Cakes

1 lb. blue crab, picked of shell
2 T. chopped fresh chives
1/2 c. green bell pepper, finely chopped
1/2 c. mayo
2 eggs, beaten
1/2 T. Worcestershire sauce
1/2 T. dry mustard (Coleman's)
1/2 T. garlic powder (dry is better than fresh, here)
1/2 T. kosher salt
1 tsp. cayenne pepper
2 cups Panko bread crumbs (reserve 1/2 c.)


Place cleaned crab into mixing bowl. Add chopped bell pepper and chives and mix. Add dry spices, then combine egg, Worcestershire sauce and mayo. Add this to crab mixture. Mix well, but don't break crab up too much. Add 1/2 c. Panko to mixture, mix well. Let sit for 30 minutes, then form into patties. Roll in remaining Panko bread crumbs. Cook in a skillet in a little bit of oil until done & crispy. Drain on paper towels, and serve!

Yield: 12 (2.5-3 oz.) crab cakes
