Ingredients for crab cake:
½ lb crab meat
¼ cup mayo
2 green onions finely chopped, white part only
2 tablespoons soy sauce
1 teaspoon wasabi sauce
1 teaspoon grated lime zest
2 tablespoons bread crumbs

Ingredients for coating crab cake:
Bowl 1: ½ cup flour, Salt, Pepper
Bowl 2: 2 eggs, 1 tablespoon water
Bowl 3: ½ cup bread crumbs, ¼ cup sesame seeds

Ingredients for wasabi mayo:
3 tablespoons mayo
1.5 tablespoons wasabi sauce
Green food coloring (optional)

Topping options:
Pickled ginger, Cucumber, Mandarin Orange


Flake crab meat into a mixing bowl. Add remaining crab cake ingredients together and cover with cling wrap. Chill in refrigerator for one hour. Set up three coating bowls and make mayo while crab mixture is chilling. When chilled, roll crab mixture into tablespoon size balls. Dip into flour mixture, then egg mixture, then sesame seed mixture. Fry crab cakes in oil in a pan on med high heat. Turn only once; they should take about 3 min. on both sides. Serve with wasabi mayo and optional toppings. Makes 20-25 small cakes.
