Spring Time Salad

For the Vinaigrette:
1 part balsamic
2 parts olive oil
1 tbsp mustard
seasonings (to taste)
macerated fruit (juice, peppers, etc.)

For the spinach salad:
1 cup baby spinach leaves
2 slices of goat cheese (1/8 inch wide)
4 strawberries thinly sliced
1 chicken breast- grilled and sliced thinly
2 tbsp chopped pecans


For the Vinaigrette:
Wisk ingredients vigorously in a bowl first.

For the salad:
Combine greens, chicken, fruit and nuts.
Pour mixed vinaigrette over salad.
Serve immediately.
