3 Fresh Eggs Scrambled
5 Spears of Asparagus
1/4 Cup Diced Kale
1 T Goat Cheese or Favorite Cheese
Salt, Pepper, Vinegar to Taste
Preheat oven to 400 Degrees
1. In a 5 inch cast iron or blued iron pan add a teaspoon of oil or butter and all to slightly smoke (Med-High Heat).
2. Add in the Asparagus and Kale and saute slightly seasoning with Salt, Pepper, and a hint of Vinegar or Lemon Juice.
3. Add the 3 scrambled eggs; pull off the heat.
4. Top off with the goat cheese and place in 400 degrees oven for approximately 8 minutes until nice and fluffy!
