Brown Bag Salmon Burgers

Ingredients:

1 - 2 lb Salmon Filet
3 - Finely Diced Jalapenos (Fresh w/ Seeds)
2 - Eggs
1 - Cup Panko Bread Crumbs
1 - Tablespoon Minced Garlic

Light sour cream & teriayki glaze to finish

Directions:

Diced Salmon into 1/2" cubes
In a large mixing bowl, mix with remaining ingredients
Portion out mix into 4 oz Patties
Oil Saute Pan with Olive Oil
Cook at medium high heat for 2 minutes on each side
Serve on burger bun with slaw

Top with Teriyaki Glaze and Light Sour Cream

Makes 6-8 servings
