Onion Soup

1 gallon sweet yellow onion, thinly sliced

1 stick butter

2 T. sugar

2 T. kosher salt

1 T. black pepper

2 cups apple cider

2 cups cooking sherry

4 cups vegetable stock or chicken stock

1 T. black peppercorns

2 Bay leaves

2 T. thyme



Tie up the peppercorns, bay leaves and thyme in cheesecloth or a coffee filter. Melt butter in stock pot, add onions, seasonings and sugar. Cook 20-25 minutes until lightly browned. Add liquid ingredients and cheesecloth with spices. Cook over low heat for 30-35 minutes. Yields about 1/2 gallon.
