Black Magic Chicken Wrap w/ Remoulade Sauce

Remolaude Sauce Recipe
1 cup of mayonnaise (Extra Heavy if Possible)
1/2 cup of horseradish Mustard (Or Spicy Brown)
1 T.  Cajun Seasoning
1 tsp dill pickle juice
2 tsp fresh Cracked Black Pepper
1 garlic clove minced
1 tsp Tabasco Sauce (or your favorite hot sauce)


Add ingredients to bowl and mix until fully combined, taste for adjustment and set aside, preferably 30 minutes before use in the fridge.

Black Magic Chicken Wrap:

4 burrito sized (large) flour tortillas
4 boneless skinless chicken breast
2 T. cajun seasoning or creole seasoning
1 Large white or yellow onion cut into thin rings
1 cup pickled jalapenos or fresh if you prefer extra heat
1 cup dill pickle chips


In one pan under medium heat melt 1 T. of butter, add onions and a pinch of salt to bring out the moisture in the onions and sweeten them. After about five minutes they will begin to become translucent, continue to cook until they turn light brown; set aside.

Pat dry the chicken breast, pour the Cajun seasoning onto a plate and press one side of the breast into the seasoning, coating the entire side evenly; do this for each breast but only one side, not both. While doing that, have a pan at medium high heat, preferably a cast iron skillet. Place each breast seasoning side down into the hot skillet, cook for about 4 minutes flip and continue to cook until the chicken is fully cooked through. A simple press of the finger can test, the chicken should be firm when done cooking. Bring to cutting board, slice into strips and add to caramalized onions.

Assembling the wraps

Take the remoulade sauce out of fridge and spoon a liberal amount at one end of each tortilla, add four dill pickle slices, spoon out your chicken an onion mix on top of the the pickles and sauce; add the jalepenos and another spoonful of sauce, bring the ends of the wrap in and begin to roll until you have your burrito shaped wrap.

In another pan over medium heat melt butter, place wraps into the pan and brown all sides. Cut diagonally, serve and enjoy!
