Strawberry and Arugula Salad

8 oz. arugula, washed and dried

1 pint strawberries, capped and quartered

1/2 red onion, thinly sliced

1/4 c. toasted almonds, sliced

1/4 c. (4 oz.) blue cheese or goat cheese

1/2 c. diced fresh pineapple

Kosher salt & black pepper to taste

1/4 c. good olive oil (EVOO)

Balsamic vinegar, reduced by half

8 oz. grilled or blackened chicken or shrimp, cooked & sliced

 

Directions:

Place arugula in mixing bowl. Toss with olive oil and vinegar reduction.  Season with salt & pepper. Plate arugula, top with strawberries and remaining ingredients. Serves 2 (dinner size servings.)
