Mexican Style Corn Soup

1 16 oz can corn drained

1/2 sweet onion diced

2 tbsp olive oil

2 tbsp butter

1 qt chicken stock

1/2 cup sour cream

1/2 cup heavy cream

32 oz cream corn

2 1/2 jalapenos diced

1 tsp cumin

1 tsp salt

1/2 tsp pepper


Saute corn, onion, olive oil and butter  in a big sauce pot until onions are translucent and starting to brown.

Add the rest of the ingredients.

Puree mixture with immersion blender or food processor. Return to Pot and bring to boil. Reduce heat and simmer.


Serve with:

Dollop of sour cream

1 tbsp black beans

pinch of cilantro
