Chicken Crepes from Elvira's Cafe

Crepe Batter:
3 cups Unbleached All Purpose Flour
1 cup Buckwheat Flour
3 Eggs (Beaten)
1 t salt
3 t Sugar
2 cups Whole Milk
2 cups Water
1 cup Vegetable Oil
Water as needed

In a mixing bowl add eggs and beat 3 minutes. Season with salt and add sugar mixing well. Slowly stir milk into egg mixture; add water. Begin adding flours to the liquid stirring constantly until the consistency is like sour cream. Stir in vegetable oil and add water until the batter is thin enough to spread quickly around a skillet (or crepe pan).

Elvira's Café Signature Chicken Crepe
1 crepe (prepared)
6 ounces Fried or Grilled Chicken Breast
¼ cup Fresh Spinach Leaves
2 T Basil Pesto
1 T Crumbled Feta Cheese
¼ cup Ricotta Cheese
¼ cup Caramelized Onions
¼ cup Sautéed Mushrooms
1 T Toasted Sliced Almonds

Place crepe into a warm sauté pan and sprinkle with feta cheese top with spinach leaves. Add warmed ricotta cheese onto the center of the crepe, Place mushroom, caramelized onion, warmed chicken, and pesto. Fold crepe around ingredients and transfer to plate. Top with our Café Sweet and Spicy Honey Sauce and toasted almonds.

For crepe batter- take 3 cups of unbleached flour, 1 cup of buckwheat flour, start with beating 3 eggs, add a tsp of salt to taste, 3 tsp if sugar ( only if ud like to make some sweet crepes); add .5 liter of whole milk, .5 l of water- slowly add flour, mixing well to a consistency of sour cream, add 1 cup of vegetable oil - add water to get the right consistency of crepe batter-
For the ingredients: fried or grilled chicken, a bit if fresh spinach, basil pesto, feta (3 tsp),riccota (3 tbsp), mushrooms, caramelized onions, and toasted almonds - top it off with any sauce you like
