1/4 # Green Tops (Radish, Turnip, Mustard etc.) (Washed and Chopped)
2 (Large) Cloves of Garlic
1/2 Cup Peanuts (Feel free to substitute your favorite nut)
1/2 Lemon Squeezed
1/4 Cup Parmesean
1/2 to 3/4 Cup Extra Virgin Olive Oil
Salt and Pepper
In a food processor:
Add Peanuts, Garlic, Parmesean, and Half of Olive oil; process for 30 to 45 seconds until uniform.
Then add greens, lemon juice and process again for about 1 minute; until once again uniform.
While food processor is still running stream the remainder of the olive oil in until all is incorporated.
Season with salt and pepper;
Brush on chicken after the grill or on your favorite sandwich!
**This Pesto tends to turn out a little on the spicy side, but if you want more of a bite add a little Crushed Red Pepper or Korean Chili Flake.
