Tomato Soup Florentine
2 tablespoons butter
2 cups chopped onion
2/3 cup diced celery
3 garlic cloves, very finely minced
1 cup water
2 (14 ounce) cans chicken broth
1 (14 ounce) can diced tomatoes, do not drain
1 (14 ounce) can crushed tomatoes
5 ounces fresh baby spinach
Salt and pepper to taste
In a large Dutch oven, melt butter. Add onions, celery and garlic. Cook and stir until vegetables are tender. Add water, chicken broth, and tomato products. Bring to boil; reduce heat. Simmer 8 to 10 minutes. Add spinach; cook until spinach is tender. Season to taste.
