Rosa's Catering Makes Quinoa Tabbouleh

Quinoa Tabbouleh

1  ½ C                     Cooked Quinoa*

1 ½  C                     Fresh Diced Tomato

½ + 1/3 C               Peeled, Partially Seeded, and Diced Cucumber

1 ½ C                      Finely Chopped  Fresh Parsley

6 TBSP                   Finely Chopped Green Onion

6 TBSP                   Lemon Juice

3 TBSP                   Olive Oil

1 tsp                      Salt

½ tsp                     Black Pepper

½ tsp                     Garlic Powder

½ tsp                     Rosa Leah's Seasoning

 

All Chopping can be done in food processor on pulse - do not over chop! Mix all ingredients together, Let stand in refrigerator, covered, long  enough for flavors to blend.

 *Cooked Quinoa

2 Cups Water

1 Cup Quinoa

½ tsp Salt

Place in medium sauce pan, bring to boil, cover and simmer 15 minutes.  Let cool before adding to recipe. Yields 3 cups
