1 medium onion, chopped
2 tablespoons butter
1 tablespoon flour
1 teaspoon salt
¼ teaspoon pepper
2 cups half-and-half
2 cups shredded cheese, divided
6 medium potatoes cubed
¼ cup dry bread crumbs
Heat oven to 375. Melt butter in saucepan and add onion, cooking until onion is tender. Add flour, salt, and pepper, cooking over low heat, stirring constantly. When mixture is smooth and bubbly, remove from heat. Stir in half-and-half and 1.5 cups of cheese. Return to medium heat and stir constantly until boil. Boil and stir for one minute.
Place potatoes in a pan or dish. Pour cheese sauce over potatoes and bake uncovered until top is brown, about 75 min. Mix remaining cheese and bread crumbs and sprinkle over potatoes. Broil for about 3-5 minutes or until crust starts to form.
