What do you know about the meat on your plate? If you got your cut from William Caritheres the answer could be 'a lot.'
Carithers and his wife Samantha opened Willy's Butcher Shop on Homberg Drive last week. As a professional butcher, William can school customers on harder to find cuts and how to prepare them. But he can also tell shoppers what farm their meat came from, what it was fed, and even when it died.
That's because they process everything in-house. Carcasses come in from Iowa, Colorado, even Tennessee and Carithers takes them apart in his processing room. The process allows the butcher to cut pieces to exact customer specifications. Carithers says it's also fresher than your typical grocery store experience because he's only cutting and packaging what he can sell in a short period of time.
Carithers went to culinary school where he learned the basics of butchering. The rest he's picked up along the way.
Willy's Butcher Shop is located on Homberg Drive behind Nama Sushi in the Bearden District shopping center.
