This is a quick and easy dessert that can be prepped ahead of time and assembled in minutes. Serves 4
16 ladyfinger biscuits
2-3 Tablespoons finely ground coffee beans (I use Vienna Coffee Highlands Blend)
½ cup coffee flavored liquor (Rum or Amaretto may be substituted - room temperature espresso may be used if you wish to omit the alcohol)
1 cup whipped heavy cream
1 cup mascarpone cheese
¼ cup sugar
½ cup white or dark chocolate shavings
Mint sprigs for garnish
Combine whipped heavy cream, mascarpone, and sugar.
On each separate serving plate, place 2 ladyfingers in a layer side by side and sprinkle with ground coffee and shaved chocolate.
Add another layer of 2 ladyfingers across the first layer and sprinkle with ground coffee and shaved chocolate.
Add a thin layer of cheese, whipped cream mix.
Add another layer or two of ladyfingers, topping each with ground coffee and chocolate shavings.
Top with a generous spoonful of whipped cream/cheese mixture.
Drizzle coffee liquor over entire dessert and top with more chocolate shavings and a mint sprig.
