Fruit Pizza

Use any fresh fruit you desire. Cut into bite size or decorative pieces. Spread the filling on the cooled crust within half inch or so of the edges. Arrange fruit as desired. Drizzle glaze over the fruit paying attention to bananas or other fruits that turn brown easily. Refrigerate until serving time. For best appearances, do not assemble more than an hour in advance.

For the crust:
1/2 cup butter
3/4 cup sugar
1 egg
1 1/4 cup all purpose flour
1 teaspoon cream of tartar
1/2 teaspoon soda
1/4 teaspoon salt

Preheat oven to 350 degrees. Lightly spray a pizza pan with Pam. In a mixing bowl, cream butter and sugar until light. Add egg and combine thoroughly. In a medium bowl, whisk together the dry ingredients. Add dry ingredients to egg mixture and blend well. Press dough evenly into the prepared pan. Bake 8 to 12 minutes or until lightly golden. Cool completely.

For the filling:
8 ounces cream cheese at room temperature
1/2 cup sugar
1 teaspoon vanilla extract
1 (8 ounce) Cool Whip, thawed
In a medium bowl, beat cream cheese and sugar until light. Add vanilla and mix well. Fold in Cool Whip. Refrigerate until ready to use.

For the Glaze:
1/2 cup sugar
Pinch of salt
1 tablespoon corn starch
1/2 cup orange juice
2 tablespoons fresh lemon juice
1/4 cup water
In a small, heavy sauce pan bring all ingredients to boil. Boil 2 minutes. Cool thoroughly before topping the pizza.
