Butter Bean Hummus

2 -15 ounce cans of Butter Beans, rinsed & drained
1/4 cup fresh mint leaves
1/4 cup fresh chopped Italian parsley
1/4 cup chopped red onion
Juice of 1 lemon
Juice of 1 lime
1/4 cup olive oil
salt & pepper to taste



In a blender or food processor, combine beans, mint, parsley, onion, lemon and lime juice and salt & pepper. Blend until almost smooth. Slowly add olive oil, adding more if necessary until the desired consistency is reached. You can make it slightly chunky or very smooth depending on your taste.


Makes 3 cups
Serve with Pita Chips or crostini or crackers.
