How to make Chicken & Dumplings

  • 8 cups of broth
  • 2 lbs of chicken breast
  • 4 to 5 lbs of boiled whole hen
  • 2 cups of self rising flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon solid shortening
  • 2/3 to 3/4 cup of milk
  • 1 egg ( optional)


Combine flour salt and pepper. Cut in shortening with a pastry blender or two forks until crumbly. Add milk and egg if used stirring with a fork. You want a mixture that is a little stiffer than biscuit dough. Roll out on lightly floured board or wax paper. Cut into. Strips and then cut into squares. Dip squares of dough back into flour ( this helps make the broth thicker). Add chicken to broth. Drop dumplings into boiling broth and reduce heat to medium. Do NOT stir. Cook about 15 to 20 minutes,covered. Yield: about 8 servings.
