Ingredients:

  • 8 cups of broth
  • 2 lbs of chicken breast
  • 4 to 5 lbs of boiled whole hen
  • 2 cups of self rising flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon solid shortening
  • 2/3 to 3/4 cup of milk
  • 1 egg ( optional)

Instructions:

Combine flour salt and pepper. Cut in shortening with a pastry blender or two forks until crumbly. Add milk and egg if used stirring with a fork. You want a mixture that is a little stiffer than biscuit dough. Roll out on lightly floured board or wax paper. Cut into. Strips and then cut into squares. Dip squares of dough back into flour ( this helps make the broth thicker). Add chicken to broth. Drop dumplings into boiling broth and reduce heat to medium. Do NOT stir. Cook about 15 to 20 minutes, covered. Yield: about 8 servings.
