Ella's handwritten recipe for fudge pie
For the crust:
2 cups Oreo cookie crumbs
¼ cup melted butter
Process about 3 cups of Oreo cookies in the bowl of a food processor until fine. Measure 2 cups of crumbs and place in a medium bowl. Add melted butter and mix with a wooden spoon until all the crumbs are coated with butter. Press the crumb mixture into the bottom and up the sides of a 9" pie pan. Bake in a preheated 350 degree oven for 10 minutes. Remove crust from oven and allow to cool.
For the Filling:
1 lb Milk Chocolate
1 cup Heavy Cream
Place the milk chocolate in a bowl and set over a pot of boiling water - making sure the bowl does not make contact with the water. Whisk the chocolate mixture occasionally until all the chocolate has melted and mixture is smooth (10 - 15 minutes). Remove the chocolate from the double boiler an allow the mixture to cool for 15 minutes.
Meanwhile whip the heavy cream, in the bowl of a stand mixer or with a hand held mixer until medium peaks. Gently fold the cooled chocolate into the whipped cream. Keep folding the mixture until all the chocolate is incorporated into the whipped cream.
Pour the chocolate mixture into the prepared pie crust and refrigerate overnight.
Serve the pie cold, with fresh raspberries and some sprigs of fresh mint.
