Summer Corn Salad

4-5 ears of corn, shucked, lightly grilled or roasted (or use leftover corn) Should yield about 4 cups

1 red bell pepper, seeded & diced

1 green bell pepper, seeded & diced

1 medium red onion, thinly sliced

1 jalapeno chile, seeded & diced

1 bunch cilantro, chopped

2 sprigs basil, chopped

2 cups cherry tomatoes, halved 


4 oz. crumbled feta cheese



3/4 cup good olive oil

2 T. fresh lime juice

3 T. red wine vinegar

kosher salt and black pepper to taste


Cut corn off cob. Place into mixing bowl. Add remaining veggies to bowl. Mix dressing and add to bowl, toss well. Serve over your favorite salad greens, and top with the feta.
