Black Bean Veggie Burger

1 small onion, diced
6-8 fresh mushrooms, diced
1/4 each red, green and yellow bell peppers, diced
1 small carrot,shredded
1 cup bread crumbs
1 cup cooked rice
1 (15 1/2 ounce) can black beans, drained

1/4 cup oil or melted butter


In a large skillet, cook vegetables in half the oil until tender. Add rice and beans; stir well. Mash beans slightly. Add enough oil and bread crumbs to make mixture hold together. Using about 1/4 cup of the mixture, form patties. Fry in additional oil as needed until done, about 3 minutes. Cook 's note: All of the ingredients are already done. You only need to heat the patties until hot through.
