Tomato & Goat Cheese Tart

1 package puff pastry dough
Good olive oil
large red onion, sliced thin
1 clove of garlic
6 oz goat cheese
One bunch of basil leaves
Fresh thyme
Kosher salt & black pepper
2-3 Garden Grown Tomatoes
½ stick butter
Parmesan cheese


Thaw your pastry sheet out on a floured surface, and cut 4"circles out of the sheets. Punch circles with a fork, and rub a tiny bit of olive oil on dough. Saute garlic, butter, and onions until soft and tender. Lay your onions on the dough, leaving an edge. Top onions with goat cheese, salt and pepper, and chopped basil. Place large slice of tomato on the onion mixture, sprinkle with Parmesan cheese and fresh thyme. Bake in a 375 oven for 8 minutes. Enjoy!
