4 Kroger Simple Truth Chicken Breasts
1 cup fresh strawberries, cut in half (save a few for garnish)
1 cup slivered almonds, chopped in a food processor until fine (pecans work well also)
1 cup Kroger Simple Truth Chicken Stock
2-3 Tablespoons chopped shallots (or yellow onions)
2 Tablespoons balsamic vinegar
1 Tablespoon fresh rosemary, chopped (plus a few sprigs for garnish)
1 Tablespoon pepper
Salt to taste
Coat the chicken breasts in the almonds and let sit for a minute or two to adhere.
Sauté chicken for about 4 minutes per side.
Add rest of ingredients except strawberries to pan and simmer until reduced/thickened.
Remove chicken and add strawberries.
Cook for another minute or two and pour on top of chicken.
Serve chicken over wilted spinach with a few uncooked strawberries and a sprig of fresh rosemary as garnish
