1 pkg. refrigerated pie crust
2 cups blackberries, fresh or frozen & thawed
3-4 tblsp. of sugar or to taste
6 tsp. cornstarch
Dash of cinnamon
Dash of freshly grated nutmeg
Vanilla Ice Cream or Whipped Cream
4 - 6-8 ounce Ramekins
Preheat oven to 400 degrees.
Roll out dough and turn ramekin upside down on top of dough and cut a circle the same size as ramekin. Make 4 circles, prick with a fork and sprinkle with a little sugar, place on a cookie sheet and bake about 5-6 minutes or until lightly brown.
In a medium saucepan bring the blackberries and sugar to a boil. Mix the cornstarch with a little water to make a paste and add to the blackberry mixture and stir until thickened.
Remove from heat and stir in the cinnamon & nutmeg. Spoon blackberry mixture into
ramekins and lay the pastry round on the top. Serve with a scoop of vanilla ice cream or whipped cream and serve warm.
