1-2 pounds fresh asparagus
16 whole new potatoes
4 teaspoons olive oil
1 teaspoon finely shredded lemon peel
4 cloves garlic, minced
1 teaspoon salt
½ teaspoon pepper
½ teaspoon dried thyme, crushed

Prep asparagus by washing, snapping off bottom of stems and cutting into 2-3 inch pieces. Prep new potatoes by washing and quartering them. In a medium pot boil water and add a little salt to water. When boiling add potatoes and boil for 12 minutes. Cook asparagus by either boiling it with the potatoes for the last 4 minutes, or steaming it separately for 8 minutes. Drain asparagus and potatoes, transfer to a serving bowl. In a separate bowl combine olive oil, shredded lemon peel, garlic, salt, pepper, and thyme. Toss vegetables in dressing and serve warm.
