Healthier Tennessee's starTNow: Turkey and Fig Skewers

(WBIR) Eating healthy over the holidays is not an easy task, so over the next couple of months, we're offering tips to promote a healthier lifestyle

This initiative is part of a state movement - Healthier Tennessee's StarTNow - Gov. Bill Haslam recently launched, encouraging Tennesseans to exercise, eat right, and not smoke.

Chef Mark McKinney, with UT Medical's Healthy Living Kitchen, is showing us how to make a health turkey dish perfect for Thanksgiving.


8 oz turkey breast, cubed

1 tablespoon fresh rosemary, chopped

1 pinch black pepper freshly ground

1 tablespoon extra virgin olive oil

8 dried figs, cut in half

1 tablespoon sherry

2 oz orange juice

8 wooden skewers, pre-soaked


Place figs, sherry, and orange juice in a small sauce pan and bring to a simmer. Allow mixture to re-hydrate. Remove from heat, and let it cool before proceeding. Toss diced turkey breast with rosemary, olive oil and pepper. Next, skewer two pieces of turkey and two fig halves. Start with a fig and alternate with the turkey. Grill the turkey for about 5-6 minutes on each side until browned or done.

Serving size: 2 skewers

Yields: 8 skewers
