Black Pepper Chicken with Curry Leaves


1 lb stir fry cut chicken

3-4 tsp freshly ground black pepper

1/2 tsp turmeric

1/2 tsp red chili powder

1/2 tsp coriander powder

1 large yellow onion julienned

1 tsp ginger garlic

5-6 large curry leaves

1 small tomato finely chopped

Salt to taste


 Marinate chicken with black pepper, turmeric, chili powder, coriander powder and a pinch of salt. Set aside for 1 hour. Sauté onion and ginger garlic in oil for 2-3 minutes. Add chicken and curry leaves and cook covered for 8-10 minutes or until chicken is almost cooked  Add tomatoes and sauté for 2-3 minutes Cover the mixture and cook for 6-7 minutes. Uncover the pan and cook on low heat until all the moisture evaporates and chicken mixture is dry. Add salt to taste. Garnish with cilantro and serve as an appetizer.
