Pimento Cheese And Bacon Breakfast Sandwich


4 Thomas Original English Muffins

1 lb bacon

4 oz cream cheese

1 cup sharp cheddar cheese, grated

1 cup Monterey jack cheese, grated

1/4 cup pimento cheese

1/4 cup mayo

1 roasted red pepper, diced

1 tsp grated onion

1/4 tsp seasoned salt

cracked black pepper and salt to taste


Preheat the oven to 400F. Line a baking sheet with foil or parchment paper and arrange bacon on sheet. Bake until the bacon is crispy, about 16 minutes. When bacon is ready, transfer slices to a plate lined with paper towels. Reserve bacon grease in a small jar. While bacon is cooking, begin mixing pimento cheese. Add cream cheese, cheddar cheese, Monterey Jack cheese, mayo, red pepper, grated onion and seasoning salt in a mixer with a paddle attachment. Mix until cream cheese and mayo are combined throughout. Add cracked black pepper and salt to taste. Heat a cast iron grill pan or plug in an electric grill. Split English Muffin in half and brush the inner side of each half with reserved bacon grease. Place on half of English Muffin onto your grill and allow it to warm. Spread about 1/4 cup of pimento cheese onto the warmed English Muffin. Top with other half  and grill until cheese begins to melt. Remove from grill, open and place 2-4 slices of bacon on top of melted pimento cheese. Replace top of English muffin and enjoy.
