Roasted Delicata Squash And Red Onion

Ingredients:

2 delicata squash (around 2lbs total)

1 medium red onion, sliced

2 tablespoons olive oil

2 tablespoons honey

1 teaspoon fresh rosemary, chopped

1/4 teaspoon salt

ground black pepper to taste

Directions:

Preheat oven to 400 degrees. Cut squash in half lengthwise and remove the seeds. Cut the halves into
1/2 inch-thick wedges. In a large bowl, toss together onion, squash, olive oil, honey, rosemary, salt, and
pepper. Then spread squash and onions on to a foil-lined baking sheet. Bake for 25-30 minutes, or until
squash in is golden-brown and tender. Enjoy!
