Roasted Garlic And Mushroom Meatloaf

ROASTED GARLIC AND MUSHROOM MEATLOAF
Makes just over 1.5 servings 
 
2# Lean Grass-fed Ground Beef
1# Crimini mushrooms, cleaned, quartered
1ea Red, Yellow and Green Bell Pepper, seeded and sliced thinly
1 small Yellow Onion, peeled and sliced thinly
1T chopped fresh Garlic
1T Kosher Salt
2t ground Black Pepper
2 large Eggs
1T Dried Mushroom Powder (optional)
 
OPTIONAL GLAZE
1/2c Century Harvest Farm Tomato Jam
1/2c Century Harvest Farm Heirloom Tomato Ketchup
 
*Preheat oven to 350F.
*Roast Mushrooms on a sprayed or lined sheet pan until softened, and reduced to about half their original size.
*While Mushrooms roast, sauté Peppers, Onions, Garlic, Salt and Pepper together in a skillet until browned and softened.
*Cool Mushrooms and Pepper and Onion mix, and chop altogether finely (this can also be done in a food processor)
*Fold Ground Beef, seasoned Vegetables, Egg, and Mushroom Powder together to make meatloaf.
*Shape into a loaf shape and bake on a lined sheet pan 30-45 minutes, or until cooked through.
***If adding an optional glaze, stir together Ketchup and Tomato jam in a bowl, and spoon over the top of meatloaf halfway through baking.
*Let Meatloaf rest 15-20 minutes before slicing and serving
