In a city known for its laboratories in Oak Ridge?s Historic Jackson Square one lab sits ready to alter the reality of taste.

Something of a gastronomic mad scientist Waldek Kaczocha is creating frozen creamy treats like few have seen.

Where the majority of chain ice cream shops will have a standard range of flavors shipped in from parts unknown the Razzleberry Ice Cream laboratory makes its unique, small batch, taste sensations from scratch. Starting with 16% butter fat cream, natural flavoring and a store full of candies, nuts and cookies something delightful is always on it way.

The philosophy of ice cream is simple according to Waldek: to prove everything is homemade you?ve got to give people something different. This is exactly what the lab delivers.

One inspiration for the flavors created at Razzleberry is what?s typically reserved to other styles of foods. Traditionally served as an Italian, cake like desert, Tiramisu ice cream is a best seller. The same can be said for Green Tea ice cream which has a pleasant mixture of light, fresh flavors.

Upscale flavors may win the over 30 crowd but keeping the kids happy is key. One of the most unique of those favorite kid flavors is Pig Food. With a simple base flavor every candy and edible morsel imaginable finds its way into the mixture. When you?re biting into a cone of this stuff there is no doubting your taste buds are going to end up satisfied.

The laboratory is not only a place for sweets, it?s a place that sort of removes its guests from the mundane and ordinary. With a joke or wise crack from Waldek people feel comfortable here and are more than willing to strike up a conversation with a stranger. The topics can range from the crazy flavors to the pig laden décor or anything under the sun. With its casual atmosphere and off kilter sense of humor it?s an easy transition for folks to become friends and strangers to become neighbors. Mad or not, Waldek is an ice cream scientist worthy of a Nobel Prize. His work bringing together distinct and different flavors is above and beyond the norm. Turning those flavors into a treat everyone can enjoy and giving people a place to come together is something few can do while making it look so easy.
