3 cups Sweet Potato—Mashed
1 ¾ cups All-Purpose Flour
1/3 cup Brown Sugar
2 ½ tsp. Baking Powder
1 tsp. Kosher Salt
½ tsp. Baking Soda
1 stick butter- Chilled and cut into 8 pieces
1 2/3 to -2 cups Buttermilk- depends on moisture of potatoes
Preheat oven to 400 degrees and spray baking sheet.
In a large bowl sift flour, brown sugar, baking powder, salt, and baking soda. Add butter to flour mixture and rub with fingertips until butter is pea-like in size, and mixture resembles coarse meal. Whisk buttermilk and sweet potato mash in a separate bowl. Add potato mixture to the flour and knead by hand until flour and potato mixture are incorporated. Be careful not to over knead the dough. Dough should be tacky and loose. Turn dough out onto a floured surface. Pat dough by hand to a 1 ½ to 2 inch in height. Using biscuit cutter, start from outside and staying close as possible work towards the center in a circular pattern to achieve a good yield without reforming dough. Continue this process till all dough has been formed. Bake in oven for 15-20 minutes or until biscuits are golden brown and fluffy. Enjoy.
