Thyme Roasted Sweet Potatoes with Charred Onion and Sorghum Jam

Overwhelmed Week: Easy Holiday Side Dishes

Ingredients:

4 fresh Sweet Potatoes, peeled and sliced into 1” thick rounds

4T Olive Oil

6 large Garlic Cloves, very finely chopped

1/4c fresh thyme leaves, finely chopped

½-1t Kosher Salt

½-1t Red Pepper Flakes

1 jars Century Harvest Farms Charred Onion and Sorghum Jam

Directions:

Preheat oven to 450F. In a large mixing bowl, toss Potatoes well with all other ingredients, adding salt and red pepper to taste. Shingle/arrange seasoned Potatoes in a 9x13” baking dish. Bake at 450F, uncovered, about 40 minutes, or until Potatoes are softened and just barely browned. Remove Potatoes from oven, and spoon Jam all over potatoes in the baking dish, and return to oven for 5-10 minutes, or until Potatoes are nicely glazed. Remove from oven and serve warm, garnished with a few more sprigs of thyme, if desired.
