Ingredients:

1 ½ tbsp cider vinegar

1 tbsp olive oil

1 tsp. Dijon mustard

1 tsp. Honey

¼ tsp. Salt

¼ tsp black pepper

5 ounces of baby kale

¼ cup dried cherries

¼ cup sliced red onion

2 tbsp. Sunflower seeds

Directions:

Combine vinegar, oil, mustard and honey in a large bowl. Add salt and pepper. Tear the kale and add the dried cherries, red onion, and sunflower seeds. Toss well and serve. Serves 4 (1 ½ cup servings)
