Ingredients:

Dry:

2 1/2 cups flour

2 tsp. baking powder

1 tsp. baking soda

1 tsp. kosher salt

1 tsp. dried thyme

Wet:

2 eggs

1/2 cup milk

1/2 cup heavy cream

1 stick butter (grated with a grater)

5-6 strips Maple Bacon fried and crumbled

1/2 to 1 cup Gorgonzola cheese crumbled; with extra for topping

2/3 cup grape tomatoes

Directions:

In a mixer combine all of the dry ingredients. Then add the eggs. Next add milk and heavy cream. Then add the grated butter.

Once combined, add bacon and Gorgonzola cheese. Add tomatoes easily with a spoon and do not overwork! Spoon batter with an ice cream scoop into a buttered and floured muffin pan. Top each muffin with a tablespoon of Gorgonzola cheese. Put into a 350 degree preheated oven. Bake for 22-25 minutes.
