3 ripe bananas

1 1/2 cups sugar

1 stick softened butter

1/2 cup honey

2/3 cup creamy peanut butter

4 eggs

1/3 cup oil

3 cups flour

1 tsp salt

1 tsp baking powder

2 tsp baking soda

1 tsp vanilla


With an electric mixer Cream together butter and sugar, add bananas, then eggs. Add peanut butter, honey and vanilla. Then add dry ingredients. Once combined, scoop into a greases muffin pan. Sprinkle oats on top as a garnish before baking. Bake at 350 for 22-25 minutes.

Makes 2 dozen.
