CRAB AND CORN FRITTERS

Ingredients:

2 T minced shallots

1 garlic cloves, minced

1 cups whole kernel corn

1 green onions, sliced

1 ½ cup all-purpose flour

1 ½ cup self rising cornmeal

2 tsp sugar

1 teaspoon salt

3/4 teaspoon cayenne pepper

1 teaspoon ground black pepper

2 large eggs

2 cup buttermilk

1 lb fresh lump crabmeat

OLD BAY DIPPING SAUCE

1 cup mayo

2 T old bay seasoning

2 T white wine vinegar

Directions:

For the fritters:

Combine the following ingredients in a mixing bowl –

Flour, Cornmeal, Salt Sugar, Pepper, Cayenne pepper

Then, add eggs and buttermilk and stir well.

Add remaining ingredients to mixture and mix well

Heat an iron skillet on a medium heat with a generous amount of oil in skillet. Take approximately 2 tablespoons of mixture and add to skillet. Cook until golden brown on each side.

For the dipping sauce:

Mix all ingredients well in a small mixing bowl.
