BASIC RATIO: Equal weights (parts) Cheese, Cheese, Cheese, Pimentos, Creamy Fat

CLASSIC PIMENTO CHEESE

8oz Sharp Cheddar Cheese, shredded

8oz Mild Cheese, such as Havarti or Gouda

8 MORE ounces of either, depending on your taste

8oz Roasted Red Peppers

(fresh, canned or jarred), diced small

8oz your favorite Mayo

*Fold all ingredients together gently until well-mixed. Optional: add a little fresh ground black pepper before mixing.

*Best served not-quite-chilled, or at least 30 minutes out of the fridge. Excellent on Grilled Hamburgers, Hot or Cold Baloney Sammiches, or even stuffed into a Fresh Summer Tomato!

SPICY SOUTHWEST PIMENTO CHEESE

8oz Spicy Cheese, such as Cabot Habanero Cheddar, shredded

8oz Smoked Cheese, such as Smoked Gouda, Cheddar or Provolone, shredded

8oz Mild Cheese, such as Queso Fresco or Monterrey Jack, shredded

8oz Roasted Red Peppers (fresh, canned or jarred), diced small

8oz Natural Sour Cream (none of that low-fat or fat-free nonsense)

1-2T Tapatio or Cholula Hot Sauce or 1 finely chopped Chipotle Pepper (optional, to really step up the heat!)

* Fold all ingredients together gently until well-mixed.


* Goes great with any and all Southwest/Tex-Mex Foods, warmed as a dip for Tortillas, and a fun treat on the Tuesday Taco Bar!

MEDITERRANEAN STYLE PIMENTO CHEESE

8oz Mozzarella "block" cheese, shredded (NOT the fancy wet balls of "fresh" Mozzarella!)

8oz "sharp" Italian cheese, such as Romano or a mild Asiago, finely shredded

8oz Feta cheese, shredded or grated fine

8oz Sun-dried Tomatoes, finely chopped

4oz EACH of your favorite Mayo AND Natural Sour Cream

*Fold all ingredients together gently until well-mixed. Optional: add a little Roasted Garlic pepper before mixing.

*This one is a great addition to an Antipasto platter, or a great toss-in for Pasta Night, and even good over a mound or Roasted and Shredded Spaghetti Squash!

BONUS RECIPE: TURKEY BURGERS

4oz whole milk Ricotta cheese

.5t Salt

.5t Ground Pepper

2t Worcestershire Sauce

2t. Dijon Mustard

20oz ground Turkey, NOT ground Turkey Breast!

Buns and Toppings of your Choice

*Stir Ricotta together with salt, pepper, mustard and sauce, and then gently fold into turkey. Divide into 4 equal portions, "patty out" and grill, flipping only once, about 4 minutes per side, until done.
