Ingredients:

Cake Batter:

1 cup of Rocky Road ice cream

¾ cup self-rising flour

1 tablespoon sugar

Icing:

Cool whip

Chocolate toppings of your choice

Directions:

· Preheat oven to 350 degrees

· Place 12 mini cupcake liners in a dozen mini muffin pan

· Combine ingredients in a medium sized bowl

· Fill cupcake liners ¾ full with cake batter

· Bake for 20-25 minutes until toothpick inserted into cake comes out clean

· Cool completely before adding toppings

Yields: 12 mini cupcakes
