3 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup butter, at room temperature
1 cup sugar
1/3 cup freshly squeezed lemon juice
Preheat oven to 375°. Line a cookie sheet with parchment paper.
In a large bowl, whisk together dry ingredients. In another large bowl, cream butter and sugar until light. Stir dry ingredients into creamed mixture until smooth. Stir in lemon juice. Drop by teaspoon or tablespoon onto a parchment lined cookie sheet. Bake until edges are golden. Do not brown tops. Cool completely on a wire rack. Ice with lemon glaze when cool.
